Bacon Wrapped Cheesy Jalapeno Poppers

For me, summer starts with good food, and an ice cold beer. We are getting ready to kick off an awesome summer, with these delicious Bacon Wrapped Cheesy Jalapeno Poppers, paired with an ice cold Corona Extra Beer!

During the summer months, we love to entertain at home, and we spend a lot of time in our backyard, and at our house, no summer kick off celebration is complete without a bucket of ice cold Corona Extra beer, and yummy appetizers. There is nothing like celebrating summer with good food, good drinks, good friends, and good fun!

When the weather warms up, I get a craving for Mexican dishes, like Tacos and Guacamole.
As Chile relleno can be made with jalapeno, the jalapeno poppers, are said to be a Tex-Mex version of that delicious dish.
Now, I don’t know who invented Jalapeno Poppers, but, I am sure glad they did, because, I always get an order of them when I see them on the menu at a restaurant, and I am so excited, that I get to make them my way, at home!

I’m mixing in some green onion to give these poppers an extra kick, that will go well with the cheeses in this dish. I must admit, that I can eat these as a meal; and with a bottle of Corona Extra, I’m all set.
To make sure that our summer kickoff celebration goes smooth, I make sure that I have all the essentials:
1: Festive dishes
2: Plenty of napkins
3: Plenty of Guacamole
4: Lots of ice
5: Lime and salt
6: Good music

My tips for these Bacon Wrapped Cheesy Jalapeno Poppers, is to use bacon slices that have been halved, because a whole slice is just a bit too much, so slicing the bacon in half is perfect. I also secure them to the Jalapeno with a toothpick, otherwise, they will unfold during baking. Use a baking sheet that has a wire rack over top, to hold the Jalapeno Poppers when baking. The heat will distribute more evenly, and the excess grease will drip away from them.

Slice each Jalapeño pepper in half lengthwise, and scoop out all of the seeds, using a small spoon.

Set aside.

In the bowl of an electric mixer, add cream cheese, cheddar cheese, green onions, and a pinch of salt.
Mix on low to combine.

Place about a teaspoon of cheese mixture, into each Jalapeno half, and wrap a slice of halved bacon piece around each Stuffed Jalapeno half.
Secure with a toothpick.

Place each stuffed jalapeno on a baking sheet, that has been fitted with a wire rack.
This will allow even heat distribution, and excess oil draining.
Bake in oven for 25-30 minutes.

Bacon Wrapped Cheesy Jalapeno Popper

Ingredients

  • 10 jalapeno peppers
  • 1 pound of bacon, slices cut in half
  • 1 8oz block of cream cheese, softened
  • 1 cup of shredded Mexican or cheddar cheese
  • 2 tablespoons minced green onion
  • dash of salt
  • limes for garnish, and to serve with

Instructions

  1. Preheat oven to 400 degrees.
  2. Slice each Jalapeno pepper in half lengthwise, and scoop out all of the seeds, using a small spoon.
  3. Set aside.
  4. In the bowl of an electric mixer, add cream cheese, cheddar cheese, green onions, and a pinch of salt.
  5. Mix to combine.
  6. Place about a teaspoon of cheese mixture, into each Jalapeno half, and wrap a slice of halved bacon piece around each stuffed jalapeno half.
  7. Secure with a toothpick, and place each stuffed jalapeno on a baking sheet, that has been fitted with a wire rack.

  10. Remove baking sheet from oven, and let cool before serving
